Get out your favorite baguette or French loaf, slice on the bias and toast to how you like it. Or do as I do - buy the bottoms ready made:
Cara's easy-peasy Bruschetta topping:
No long list of ingredients here, just these.
2 medium tomatoes, seeded and finely diced
1/4 finely diced salad onion (adding more or less to mix depending on how much or how little you like it)
A clove of garlic, minced or pushed through a press
Salt and pepper to taste
Extra-virgin olive oil to taste (around a tablespoon is a good amount I've found)
Mix all the ingredients together and stash in the fridge to cool. I like it this way. The contrast of hot bread and the topping is perfect: and cooling the mix also helps meld the flavors. Enjoy! This is the one I made today. As you can see they are not huge - and this one is sitting on my little 6 1/2 inch diameter bandit plate. Bad news is, I fit in two over about a half hour. Ack!

ReplyDeleteI totality LOVE brushetta! I am a huge fan of fresh salsa, I make it all the time. Making brushetta to me is like making an Italian salsa! I just love the fresh taste of the simple ingredients. <3

that looks yummy--I can't wait for summer so I can pull the tomatoes, onion and basil from my garden. I usually add some cubed buffalo mozzerella in the mix as well. Now I'm drooling...but its only 9:30 in the morning and I have to wait for such a challenging food until late afternoon....droolllll drippppp slurp.
